Executive Chef & Co-Founder
Marco trained under three Michelin-starred kitchens in Lyon and Cape Town before returning to Namibia to open Ember & Salt in 2019. His cooking is grounded in fire — he believes the Maillard reaction is the most honest form of flavour.
Every menu he writes starts with a single question: what is Namibia growing right now? The answer shapes everything from the starter to the cheese course.
His philosophy is simple: local ingredients, classical technique, no shortcuts. If it's on the menu, it was prepared that morning.

Set in a restored 1920s colonial building in the heart of Windhoek, Ember & Salt seats 48 guests across two intimate dining rooms and a courtyard terrace.
The design is deliberate: warm light, honest materials, and a kitchen that is open enough to hear the fire.
